Goat meat, the healthy meat choice:

    goat kabobs
  • less cholesterol than bison, beef and other common meats
  • higher in essential amino acids compared to other meats
  • more unsaturated fatty acids compared to other meats
  • higher in iron than other common meats including bison
  • non-allergenic qualities

Goat meat is one of the most widely consumed meats in the world. About 73% of the red meat consumed worldwide is goat. The molecular structure of goat meat is different than that of other meats. Therefore, goat meat digests more easily. It is also a low fat, good tasting alternative to chicken, salmon or bison. Goat meat is much lower in saturated fats than the rest of the commonly consumed meats and equal to bison (see: nutrition comparison chart). This is because goats tend to deposit their fat around their internal organs. This internal fat is easily separated from the organ meat. Goats do not marble (intersperse fat within their muscles) even when fed a grain diet.

Pasture raised Lamb

cooked lamb chopsUSDA defines “pasture raised” lamb as spending over 51% of their life on pasture. Our lambs spend 90 to 100% of their life on pasture. The majority of their time is spent safe with their mothers within the protective flock learning to choose from a diverse forage menu much like the joy we experience at a well stocked salad bar.

Pasture raised lamb is most loved for its delicate flavor and is a basic ingredient in many ethnic cuisines around the world (Mediterranean, African, Mexican, South American, Indian, Greek, French, Turkish, Russian, Asian and on and on).
