Simple Oregano Roast Leg of Lamb
Ingredients:
5-6 lbs leg of lamb
1/4 cup olive oil
2 tsp dried oregano leaves
salt and freshly ground pepper to taste
To prepare:
Position a rack in bottom of oven. Preheat to 350F.
Trim off and discard any excess fat from lamb leg and pat dry with paper towels.
Place lamb on a large rimmed baking sheet and rub with the olive oil, oregano and season with salt and pepper.
Loosely cover with foil. Roast in bottom of oven for 25 min.
Transfer to a roasting pan. Add your favorite vegetables (optional).
Position oven rack in lower third of oven. Increase heat to 375F.
Roast lamb in lower third of oven, uncovered, until a thermometer inserted into the thickest part of the lamb (not touching the bone) reaches 125-130F for medium-rare, about 45 minutes.
Transfer lamb roast to a cutting board and tent with foil. Let stand for 10-20 minutes before slicing.
