Lucia Watson’s Pizza with Lamb Sausage, Feta, Tomato and Herbs

Ingredients for the sausage:

2 Tbsp olive oil
1/2 yellow onion, sliced
2 cloves garlic, minced
1 lb. ground lamb
2 tsp salt and1 teaspoon ground pepper (or to taste)
1/2 tsp dried oregano
1/2 tsp fresh lemon juice
1 tsp fennel seed

To prepare the sausage:

Add the olive oil to a heavy skillet and heat until almost smoking. Add the onion, garlic, lamb, salt and pepper, oregano, fennel seed and lemon juice. Cook stirring to break up the sausage and mix the flavors until the meat is browned and medium rare. Set aside to cool.

Ingredients for the pizza:

2-12 inch pizza skins, either raw or slightly cooked. Even a good flat bread will work for this recipe.
1-2 Tbsp olive oil
2 tomatoes, sliced into rounds
1/2 cup pitted black olives (kalamata work well, for example)
1 cup crumbled feta cheese
Lamb sausage (from above)
Chopped fresh parsley and mint

To prepare:

Preheat the oven to 400°. Lay the pizza skins on a heavy sheet pan or pizza stone. Drizzle the skins with the olive oil and lay the tomatoes, sausage, feta and olives on top scattering evenly over the crust. Bake in the oven for about 10-15 minutes or until hot and crispy (or to your taste). Sprinkle with the parsley, mint and ground black pepper, and serve.
