Pan-Fried Lamb Leg Steak with Rosemary/Garlic Marinade

Ingredients:

1 lb lamb leg steak
1 sprig fresh rosemary, leaves only
1 garlic clove
2 Tbsp olive oil
sea salt and freshly ground black pepper to taste

To prepare:

Trim any excess fat from lamb steak.
Crush garlic clove and rosemary leaves in a mortar and pestle, then mixing in sea salt, black pepper and 1 Tbsp olive oil.
Rub mixture over the meat and marinate for 10 minutes, longer if possible. 

Heat remaining oil in skillet to medium high heat. 

Fry the marinated lamb leg steak until golden on both sides. For medium-rare cook on each side 4-5 minutes.

Provides 1-2 servings

Kitchen tip:
Mortar and pestle can be substituted by crushing and extra-finely mincing rosemary and garlic with a knife, placing mixture in a small bowl, breaking down mixture further using the bottom of a spoon as the pestle, and finally mixing in salt, pepper and oil.
