Shepherd’s Lamb Shank
Ingredients:
4 lamb shanks
3 Tbs. flour
Salt and freshly ground pepper to taste
2 Tbs. butter
2 Tbs. peanut oil
1 1/2 cups finely chopped onion
1 cup finely chopped celery
1 cup finely chopped carrot
1 cup dry red wine
2 sprigs parsley
1 tsp. dried thyme or 1 sprig fresh thyme
1 bay leaf
1 tsp dried marjoram
To prepare:
- Preheat oven to 350 F.
- Rub the lamb shanks with flour seasoned with salt and pepper. Heat the butter and oil in a skillet. Brown the lamb on all sides, then transfer to a casserole. Add the onions to the same skillet and cook, stirring until clear. Add the celery, carrot and cook briefly. Stir in the wine and pour the mixture over the shanks.
- Add the remaining ingredients and salt and pepper to taste. cover closely and bake 1 1/2 to 2 hours or until the meat is tender.
Prep time approximately 20 minutes.
Provides 4 generous servings.
