Grilled, Curried Lamb Steaks
Ingredients:
2 lamb steaks
1 garlic clove (minced)
1/2 tsp salt
1 1/2 tsp fresh ginger (grated)
3/4 tsp ground turmeric
3/4 tsp ground coriander
3/4 tsp ground cumin
3/4 tsp oregano
1 tsp ground black pepper
1 Tbsp soy sauce
1 Tbsp lemon juice
1/4 cup olive oil
To prepare:
Trim excess fat from lamb, leaving in the bone.
Crush garlic with the salt in bowl.
Add ginger, turmeric, coriander, cumin, oregano and black pepper.
Stir in soy, lemon juice and oil.
Coat lamb evenly on both sides.
Cover and marinate 3 hours to 3 days in refrigerator.
Bring to room temperature and grill or broil meat 4-5 minutes each side.
Note:
Adjust seasoning for pasture-raised, delicately flavored lamb from Shepherd Song Farm.
Provides 2-4 servings
