Shepherd’s Lamb Shank

Ingredients:

4 lamb shanks
3 Tbs. flour
Salt and freshly ground pepper to taste
2 Tbs. butter
2 Tbs. peanut oil
1 1/2 cups finely chopped onion
1 cup finely chopped celery
1 cup finely chopped carrot
1 cup dry red wine
2 sprigs parsley
1 tps. dried thyme or 1 sprig fresh thyme
1 bay leaf
1 tps. dried marjoram

To prepare:

Preheat oven to 350 F.

Rub the lamb shanks with flour seasoned with salt and pepper. Heat the butter and oil in a skillet. Brown the lamb on all sides, then transfer to a casserole. Add the onions to the same skillet and cook, stirring until clear. Add the celery, carrot and cook briefly. Stir in the wine and pour the mixture over the shanks.

Add the remaining ingredients and salt and pepper to taste. cover closely and bake 1 1/2 to 2 hours or until the meat is tender.

Prep time approximately 20 minutes.

Provides 4 generous servings.
